A New Holiday Tradition
Last night we went to downtown Littleton do participate in th Candlelight Walk. They had apple cider and carolers, groups of people playing different instruments. Then Santa come down Littleton Blvd. as he got to each block the Christmas lights would turn on, on that street. It was cold but the festive mood helped. As we were leaving it began to snow. It was a perfect ending to a great night.

Thanksgiving
So not much going on here. Ok maybe there is. Weekly cub scout meetings and basketball for Jack, Ballet and Tap for Kate and her Daisy scouts, Green Team (recycling club) for Jenna, LoLo is getting ready to start swimming and I am winding down my first semester back at school. I will really be glad to have a break from school. I am continue to work at the Village Preschool. We will see if I decide to quit and go to school full time next semester. Plus all the school activites that follow 4 children.
I am excited for Thanksgiving and getting to spend some time with my family. We all get so busy and never have much time to spend together so it is nice to wind down and enjoy each other's company.

Cub Scout Halloween Carnival
THe cub scouts held a carnival for the school. It was very succefull. We were in charge of running the cake walk which I think was the favorite game. It was among my kids because between the three of them (Jenna was not with us)they won 7 cakes. It came in handy for all of the parties we had to take a dessert too this past week.
Kate's achievments
Kate cheered at a Arapahoe soccer game with Arapahoe Mini Cheers, she recieved an award from her teacher for being a good citizen and excellent student in front of the whole school and she was student of the week Ocotber 6, 2008. SHe loves to sing, does ballet and tap, tennis and swims. She is a good girl even with her little attitude.

Halloween Festivities
At church they had a trunk or treat. The kids had a lot of fun. Jenna decide her costume was not what she wanted to be so she changed her costume to a Princess for Halloween.
On Halloween, we went to the Halloween parties at school. Lauren's was in the cafeteria since she is big fifth grader they combine both class and have one big party. Jack's was equally as fun. They mad dirt cups, dressed each other like a mummy with toilet paper. Kate had a lot of fun at hers also.
Halloween night, Lauren's friend Faith and her family had a party for several families in their class from school. It was a lot of fun. The parents took turns taking the kids trick or treating.
Kate also had a party. She had a lot of fun at hers.
Jenna went trrick or treating with 2 of her friends then had a sleepover at her friend's Kates house.
It was a fun Halloween but different from our usually of getting a pumpkin shaped pizza from Papa Murphys and trick or treating.

A Yummy Recipe
Like most nights I am wandering around trying to decide what to make for dinner. I decided that chicken enchiladas sounded good but all the time and prep that goes into making them is just to much. So I decided to make a casserole and here is the recipe. It took about 10 mintues to make and 20 minutes in the oven.
Enchilada Casserole
Corn Tortillas
Chicken (either a rotisserie chicken or chicken that you cook in the oven)
2 jars enchilada sauce
green onions chopped
tomatoes chopped (to put on top)
shredded cheese
1 large can of green chilies
Pour 1 1/2 jars of enchilada sauce into a mixing bowl
Add the chicken, green onions, green chilies and some cheese
Spray a 9x13 pan with cooking spray
Put corn tortillas across the bottom of the pan
Put the mixute on top of the tortillas
Do another layer of corn tortillas
Pour the rest of the enchilada sauce across the top of the tortillas and sprinkle with cheese.
Bake in your oven at 350 degrees until cheese is melted and it is heated through.
You can top them with sour cream, tomatoes, salsa,avocados and onions if you want.

Happy 40th Birthday Jim.
Here is to a great father, hard worker, excellent and loving husband, wonderful supporter of our family, cub scout committee chairman, Peabody accountable committee member, yard worker, puts up with our animals even though he would rather not have them, lets me relax when I don't want to clean the house and jumps in to help, walks the kids to school everyday. You may lack technology ability but now you can text with your new cell phone. There is sooooooooo much more but here is to you and the next 40 years.
