A Yummy Recipe

Like most nights I am wandering around trying to decide what to make for dinner. I decided that chicken enchiladas sounded good but all the time and prep that goes into making them is just to much. So I decided to make a casserole and here is the recipe. It took about 10 mintues to make and 20 minutes in the oven.

Enchilada Casserole

Corn Tortillas
Chicken (either a rotisserie chicken or chicken that you cook in the oven)
2 jars enchilada sauce
green onions chopped
tomatoes chopped (to put on top)
shredded cheese
1 large can of green chilies

Pour 1 1/2 jars of enchilada sauce into a mixing bowl
Add the chicken, green onions, green chilies and some cheese

Spray a 9x13 pan with cooking spray
Put corn tortillas across the bottom of the pan
Put the mixute on top of the tortillas
Do another layer of corn tortillas
Pour the rest of the enchilada sauce across the top of the tortillas and sprinkle with cheese.
Bake in your oven at 350 degrees until cheese is melted and it is heated through.
You can top them with sour cream, tomatoes, salsa, avocados and onions if you want.

All ready to go and don't want to leave!

The kids didn't want to leave. We had so much fun and can not believe how much stuff comes with a family of six.

Bob and Tony's Pizza

When we got into Estes Park I knew I had to take my kids to Bob and Tony's Pizza. We used to go to this restaurant when the youth group would come home from the YMCA Camp.

Estes Park

We spent last weekend up in Estes Park for Jim's 40th birthday. It was so much fun. We saw elk, saw a car show, ate ice cream, did some some shopping therapy, went on a hike, hung out in the hot tub in the evening and stay in a cute two bedroom cabin. We all want to go back as soon as possible.

The pictures of the kids is in a little river we found when we first got there, LoLo, Kate and Jack in front of our cabin and Jack is showing off the cabin.

Images of Summer

Here are few pictures from the pool, vacation bible school and our cute nephew/cousin Brigg and I will post more because they won't let me put any more pictures on this blog.

The last picture is of Lauren and her friend Amy from church.

Back to School

Here are my 4 wonderful children.

Jack is 8 and in the 3rd grade. Wow, my baby boy who was just in lighted tanning booth (he was jaundiced and he had a little lighted bed that he would lay naked in) is growing up so fast.
LoLo is 10 and the top dog at Peabody elementary school. She is looking forward to the fifth grade. She is turning into a beautiful girl and has a BIG HEART.
Kate is 5 and is the sweetest and kindest little girl. I can hardly believe my baby is in kindergarten. Wow how time flys. She is always there with hugs and kisses for mom when I pick her up at the end of the day.
Jenna is 12 and in the seventh grade. She smart, beautiful and so helpful. I am so glad she is part of our family.
Here is to a great school year.

Baseball

Jack had a good baseball season. He loves to play all sports. But I think baseball is his favorite but we will see when he starts football.

Softball

Ok here we go again. I am really late at posting.

Jenna had a great softball season. She is considering competitive next year. Jim coached her and they had a very good season.
